Deliciously Easy Plant-Based Oatmeal Chocolate Chip Cookies Recipe

Moving towards a plant-based diet doesn't mean we have to miss out on delicious baked treats. When my family and I embarked on our health journey, I was determined to recreate the tasty foods, desserts, and snacks we loved, but with a healthier approach. My learning truly began when my youngest son was just 6 months old, and I discovered he was allergic to many common foods like dairy, wheat, nuts, soy, and sesame. This prompted me to explore and learn how to prepare our favorite dishes without the ingredients my son couldn't have. I was already interested in health, but this pushed me further towards making healthier choices and removing foods that could cause long-term harm.
Here we are, five years later, and my family and I have fully embraced a plant-based diet. We made the switch almost two years ago, and I genuinely feel better than ever. I completed 40 years this year, and I am incredibly thankful to feel healthy and strong. I used to get sick frequently, had back and neck problems, and at one point, I couldn't move without experiencing pain. Now, I can truly say I no longer face those same challenges. I rarely get sick, and my body no longer endures the pains it used to. I still have progress to make to achieve optimal health, but I am confident I will get there.
This recipe I share with you is the first recipe I created using only plant based ingredients.
I hope you enjoy these delicious cookies as much as we do.
Ingredients:
1 Cup Oat Flour - I prefer to grind up some oats, and I find it to work better for this recipe
5 Tablespoons of butter - we use vegan butter
1/4 tsp salt
1/4 tsp baking soda
1/4 cup + 2 tablespoons of coconut sugar - you can also use monkfruit, or you can do 1/4 cup coconut sugar and 2 tablespoons of monkfruit. These are healthier sugar options.
1 tsp vanilla extract - we only use pure
1/2 tbsp cocoa powder *optional if you want an extra chocolate taste
1/4 tsp cinnamon - ceylon cinnamon
Egg Replacement:
This replacement is for 2 eggs. I have found this replacement to work well with my baked goods
-2 tablespoons of oat flour - I use ground oats, and also make the measurements full
-1/4 cup boiling water
-Once you add the water to the oats, whisk it to mix well, and then cover and let it sit for 5 minutes before adding to the mix
Instructions:
Preheat the oven to 350 degrees
Make your egg replacement and set it aside for 5 minutes
Melt your butter
Mix/sift all the dry ingredients, except the cocoa powder
In a separate bowl, add your sugar, and then add the melted butter and mix
Next, add the egg replacement to the butter and sugar, and mix well to incorporate. You will begin to notice that the consistency is very similar to when you bake with eggs
Next, add the vanilla to the wet ingredients, and then add the cocoa powder.
Add, slowly while mixing, your dry ingredients, and mix until it is incorporated. Do not overmix.
Mix the chocolate chips into the batter. Sometimes I use chocolate chunks, and if I do, I add them to the tops of the cookies once they are formed.
-We use dairy-free chocolate. I will add a link below with some of the ingredients we use.
Add cookies to a baking tray - I usually use all-natural parchment paper, but if I do not have then, I make sure to grease the tray with butter.
Place cookies in the oven and bake for 5 minutes
Remove the cookies from the oven, let them cool, and enjoy ☺️
