Pancakes with Plant-Based Ingredients

Ingredients:

  • 2 Cups of Flour

  • 4 tablespoons butter (we use earth balance soy free)

  • 1 cup milk (we use oat or almond milk)

  • 3 teaspoons baking powder (we make our own 3 x 1/4tsp baking sode & 3 x 1/2 tsp of vinegar)

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon of cinnamon (optional)

  • 3 tablespoons of honey (you can replace with 2 tablespoons of sugar if you like)

  • Egg Replacement:

    • 2 tablespoons oil (we use coconut oil)

    • 2 tablespoons water



Directions:

  1. Mix all dry ingredients

  2. Melt butter

  3. Add the butter, oil, and water to the dry ingredients

  4. Add the honey

  5. Add the baking powder mix - if you use regular baking powder, then add it to the dry ingredients

  6. Add the milk - I don't add it all at once, a little at a time, you may need more or less depending on the thickness of pancakes you desire

  7. Mix well

  8. Heat pan with/ butter

  9. Once the butter is sizzling, add the batter.

  10. Flip pancakes once you see bubbles appear (you may flip before or later, depending on the color and crispiness you like)

  11. Remove from the pan and enjoy 😋
